Today I took a recipe from 'Fresh and healthy Now VEGAN!' by Lynda Stoner.
The Vegan Strawberry Shortcake. This is what it''s meant to look like..
This is mine.
Here is the recipe for anyone interested in dabbling into baking one themselves, I'm yet to taste mine (dessert tonight) but I'm sure it'll be great. And if I can do it, then anyone can!
  • 125g Vegan margarine
  • 75g caster sugar
  • 250g self-raising flour
  • 3 teaspoons baking powder
  • Pinch salt
  • 275ml soy yogurt
  • 1/4 teaspoon vanilla extract
  • 1/4 cup strawberry jam
  • 450g strawberries slices
  • Icing sugar to taste
Preheat over to 180 degrees C. Melt marg in saucepan and stir in caster sugar till dissolved. Grease 20cm baking tin. Sift flour and baking powder in a bowl, add salt. Pour marg mix into dry ingredients. Add yogurt and vanilla extract. Mix well till reaches dropping consistency. Spoon into tin and bake for 20-25mins (till golden). Cut cake in half, spread lower half with strawberry jams and strawberries. Place other half on top and dust on icing sugar and decorate with any remaining strawberries. And WALAH!
